Quality is about ingredients and intention. Patience is bread’s greatest virtue. We use a slower natural fermentation process to bring out the grain’s full character. Once the dough is ready, every loaf is handmade.
We bake with four simple ingredients: unbleached, unbromated wheat flour, water, salt, and sometimes yeast. That’s it. This restraint protects what bread should always be — robust in flavor and nutrition.

Ryan didn’t intend on being a baker. He was a mechanic and an engineer — always fascinated by detail and process but fed his soul with motorcycles and Jimi Hendrix. Then life, as it often does, changed the plan. His family’s bakery needed his hands. He offered them. What he didn’t anticipate was baking would call on his talent for meticulous process and awaken a passion for artisanship. He began pursuing handcrafted methods, studying under master bakers, exploring the ancient grains and natural fermentation that would become the cornerstone of his bakery: Sixteen Bricks.
Based in Cincinnati, Sixteen Bricks reflects the city’s spirit: grounded in authenticity and committed to craft. Real ingredients, real process, and real flavor.
